Appellation: Blaye – Côtes de Bordeaux
Terroir: Blue and gray clays mixed with fossils
Grape varieties: Merlot 90% – Malbec 7% – Cabernet Sauvignon 3%, composed of the oldest vines (40 to 80 years) in the vineyard.
Vineyard area: 10 hectares cultivated with the utmost respect for the environment, biodiversity, and in a “Total Nature” spirit.
Work: The soil is plowed, amended, and no chemical herbicides or insecticides are used. During winter, between the rows, wild corn salad, a delicate wild green, and the “baragane,” a vine leek with a powerful and sweet taste, are harvested. For them to thrive, they need loose, fairly deep soil. Ideally, plowing is done before harvest.
Harvest: Manual harvesting at optimal maturity to preserve the purity of the fruit, with two selections in the vineyard, transport in small bins, and grape unloading with a fork.
Vinification: In stainless steel tanks; fermentation and maceration with only natural yeasts for 30 days with daily pump-overs.
Aging: In barrels (30% to 50% new) for 12 to 18 months depending on the vintages.
