In November 2021, Pauline Genot reclaimed her maternal grandparents’ vineyards in Saint-Romain and Auxey-Duresses and launched Vignoble de Pauline. The wines are vinified and matured at Domaine Truchetet in Premeaux-Prissey, sixth generation of the family estate.

Saint-Romain sits high and cool at the back of the Côte de Beaune — an appellation that has always favoured tension over opulence. « Au Bas de Poillange » yields around 2,000 bottles a year.

Farming is organic, the cellar deliberately quiet: work the soil, let the site speak. Fermentation on indigenous yeasts, minimal intervention, bottling by gravity, without pumps.

Roundness and minerality together, with beautiful freshness and floral aromas, closing on real tension and delicate salty notes. Serves well with fish, seafood and poultry. Ageing potential 6 to 8 years.
