Domaine Coche-Dury is the most coveted white-wine address in Burgundy — a small family domaine in Meursault whose wines, now made by Raphaël Coche alongside his father Jean-François, are defined by their smoky reduction, saline drive and a length few whites in the world can match.

Perrières is the summit of the range — a premier cru of grand cru stature — and 2014 is arguably the greatest white Burgundy vintage of its decade. The pairing needs no argument: this is one of the definitive white wines of the modern era, drinking superbly now with years in hand.
